Agave jelly is a traditional sweetener from Mexico, obtained from Wild Agave. The cactus juice is filtered and then heated to hydrolyze the carbohydrates into sugar. The jelly obtained is sweeter than honey and less thick. It has a high sweetening power and a low glycemic content.
